If you've been craving Chinese then try this healthy variation. The noodles have no carbs, and no calories and can be found at most Asian Markets. It may not taste like a 1,500 calorie take-out meal but it is pretty good.
Ingredients:

16 oz Shirataki Noodles (w/o Tofu)
•
1/2c pineapple chunks
•
9oz of medium sized cooked shrimp, everything removed
Rinse the noodles thoroughly, then cut*, and squeeze as much water as possible. Set aside. Now, in large pan or wok, spray with Pam and add the pineapples, Shrimp, sauce. Stir for about a minute. Add the can of peas and carrots, and crack the egg. Sir for a few seconds till the egg cooks. Lastly add the noodles (they come precooked already), and stir everything well, and remove from heat once the noodles are hot. Serve.
*due to the texture of the noodles, it's better to cut them really small.
